A few weeks ago I had an idea that’s worked out well enough that I wanted to share. I love using fresh ginger, but just don’t use it up fast. Plus, it’s a pain to peel and chop. I had a bit of ginger that was nearing its expiration date, so I peeled it and put it in the blender with enough water to create a “ginger slush”. Then, I poured the ginger slush into ice cube trays and froze it. This picture is of the resultant ginger ice cubes. I can now use this to make fresh ginger tea , add to soup, or any other dish that calls for a spot of ginger.
